Cake!

I used to be very sceptical about “cake” that had no sugar, no butter, and no wheat flour. How can that be cake? And how could it ever be tasty?

Even though I know the value of keeping sugar to a minimum, I am not prepared to remove cake from my life! So, I’ve done LOTS of experimenting and these sugar-free recipes are definitely tasty enough to be called cake!

Blondies

Blondies are blonde brownies with just as much chocolate-y flavour! The joy of these is that you would never guess they contain chickpeas. Chickpeas give a wonderfully creamy texture and make a nutritious, protein and fibre-rich base.

These are super-fast to whip up and hit the chocolate spot without a massive sugar high (and then the inevitable crash).

Banana Muffins

All the sweetness in these muffins comes from the banana and honey. Bananas are a fantastic prebiotic, feeding those important microbiota in your large intestine. A great reason to have cake for breakfast!

Chocolate Truffles

These delicious little bite-sized chocolate treats are based on the  Danish ‘havregryskugler’. The sweetness comes from the pureed chestnuts which are high in protein and complex carbohydrates - so you wont get that unpleasant sugar rush and crash. There is no cooking involved - just combine the ingredients and roll to your preferred size for this speedy snack option.

The Richest Brownies Ever

These beauties are wheat free and very low sugar but packed full of dark chocolate. Delicious. They wont mess with your blood sugar balance and you will be eating polyphenol-rich dark chocolate and plenty of protein from the secret ingredient: black beans!

I cut them up in to small bite-size pieces and put them in the freezer - ready for visitors, lunch boxes, post-lunch snack . . .

Breakfast Cake  

No sugar, no butter, no gluten - but very delicious. This is based on the good old banana bread recipe, but I’ve tweaked it so that it wont give you a sugar rush (and crash).
