Chocolate Truffles

These delicious little bite-sized chocolate treats are based on the  Danish ‘havregryskugler’. The sweetness comes from the pureed chestnuts which are high in protein and complex carbohydrates - so you wont get that unpleasant sugar rush and crash. There is no cooking involved - just combine the ingredients and roll to your preferred size for this speedy snack option.

  • 250g oats

  • 150g pureed chestnuts

  • 40g best quality cocoa powder (check for no added sugar)

  • 0.4 cups coffee

  • coconut flakes for coating

INSTRUCTIONS

  1. Combine the chestnut puree, oats and cocoa powder. Mix thoroughly.

  2. Add the coffee slowly while mixing until fully combined.

  3. Roll into balls.

  4. Place the balls in an airtight container. Use a piece of parchment paper to separate the layers of balls. Store in the fridge, they keep for up to a week.
